Prepare brew

Gather a spoon or stir stick. Fold the filter and place 3 sides of the paper near the pour funnel. Use hot water to wet filter and heat the Chemex. Remember to pour out the pre-heat water.

Bloom pour

Pour 110g of water for the bloom phase. Circle from the inside, to the outside, back to the inside and back to the outside

Stir & Wait

Place a spoon or a stir stick as deep into the center of the bed as you can, and lean the coffee in at different directions to get the water to seep into every corner of the bed. Then, wait until the next pour.

First pour to 310g

Make your first 200g pour up to 310g. Touch the center and circle outwards. Come back to the center of the bed and pour pretty heavy into the center again.

Wait for 2nd pour

Wait for the 2nd pour, where we'll lift the bed from a little higher.

Second pour to 510g

Make your second 200g pour up to 510g. Just stay in the center of the bed to carve out the grounds and move them up the side walls. You want to see bubbling happening in the center of your bed.

Wait for 3rd pour

Third pour to 710g

Make your third 200g pour up to 710g. Again, just stay in the center. Look for that bubbling to happen. This pour should get you up to the top of the Chemex.

Fourth pour to 900g

Start the last pour in the center again. Right when you hit 850g, slowly start to circle out, washing the everthing back down. Top it of in the center until you reach 910g.

Wait for drain to finish

Wait up to 6 minutes for the coffee to drain. Some coffees might take longer, up to 6 1/2 or 7 minutes. If it takes longer than 7 minutes, consider making your grind size even more course.
